Innovative Carbonic Maceration Process
Elkin Guzman’s expertise in processing shines through in this carbonic maceration lot, a method that intensifies flavor development:
- Whole cherries are fermented in CO₂-infused tanks for 96-144 hours.
- Pulped coffee is reintroduced into the must (fermentation juice) to further develop sugars and microorganisms.
- A second fermentation under CO₂ maceration lasts 72-96 hours, enhancing aromatic and acidic qualities.
- After careful washing, the beans undergo 18-25 days of drying, ensuring exceptional cup clarity.
